My vegan tuna sushi bowl is made out of watermelon! At first this may sound not appealing at all. Watermelon and soy sauce? In my head it just sounded wrong. Still, I gave this a try and thank god I did because it is amazing. The watermelon gets a raw tuna like consistency after baking it for half an hour. Then I let it marinade over night so it could take in all the flavour. And at last the watermelon doesn’t taste, feel and looks like watermelon anymore. Instead we made a delicious, fresh, juicy and vegan tuna!

A sushi bowl, especially my vegan tuna sushi bowl, is a great dish for warmer days! When it is a hot summer day I don’t see myself eating a warm casserole or soup – it is just to heavy. The vegan watermelon tuna is so fresh and juicy and a great alternative!

For the vegan tuna sushi bowl I added sushi rice into a bowl. I topped it with just vegan tuna and avocado. My boyfriend added my most hated vegetable – cucumbers (I still used his dish as the picture, because it looked way cooler!). For decoration we simply added black sesame seeds. We ate it with soy-sauce and sesame sauce.

There are many more ideas, what you could do with my raw vegan tuna, it doesn’t have to a sushi bowl. I can imagine it in self-made sushi maki or even nigiri – I’ll definitely try that next time I’m making sushi. Also – why not eat it as sashimi?

  1. Cut the watermelon into 2cm thick slices. Places on a baking tray and sprinkle with a little bit of salt. Bake at 200°C for 30-35min.

  2. Let the watermelon cool down and cut the slices into cubes.

  3. Mix the marinade. Start mixing water with miso paste, add sesame oil, rice vinegar, soy sauce and the nori sheet (cut into tiny pieces).

  4. Add the watermelon cubes into the marinade and let it marinade over night.

  5. Serve in a sushi bowl and enjoy!
