I’ve always loved French toast and it was one of the first recipes I learned when I was a child. I remember being so proud I wrote all the ingredients down, so I’d never forget. In my recipe back then there was a lot of sugar, dairy and unhealthy fat. And even though eating unhealthy sometimes probably is really good for your mental health, it’s great to have the option to swap to healthy recipes from time to time.

I’ve seen the idea of using plant milk and chickpea flour several times all over Instagram so I decided to give it a try. Turned out it really does taste like normal French toast (and it’s healthy and doesn’t support cruelty against animals)!

Also, while researching which cuisine I had to categorize the recipe I realized that in fact, it is not French. I don’t know where the name “French Toast” comes from. But it actually appears to be invented in ancient Rome. Still, the next reference researchers found was German. In our country, it’s called “Arme Ritter” which doesn’t translate to “French toast” but “Poor knights”.
No matter where it came from I am really happy people invented it because I’d probably never have had the idea to soak bread in a sweet egg mixture and eat it with fruit.

As you can see in the picture I love to serve it with fruits like strawberries, blackberries, or blueberries. I mixed stevia with some cinnamon and sprinkled it all over the toast (you could also use sugar and cinnamon if you like). In German supermarkets, you can find a lot of vegan honey options, perfect for drizzling a little bit onto my plate.

To everyone wondering (like my boyfriend) while seeing the picture; It is in fact French Toast. There is bread in the pictures. It is a baguette. No, it does not like potatoes with fruit, I don’t wanna hear it! :’D

Ingredients

Instructions

  1. Mix plant milk, chickpea flour, sweetener, cinnamon and a pinch of salt

  2. Let slices of bread soak in the mixture for about 15min.

  3. Fry the bread in a pan (on low heat if you don’t want to use oil).
