baked vegan camembert

Back at home with my parents we sometimes ate non vegan baked camembert. I’d name it a typical German dish but I think the origin is French or Swizz. You bake the cheese, cut it open and dip chunks of bread in it.

So, now I’m eating vegan and while my parents baked themselves a cheese I wanted to have something similar. I searched for vegan recipes and found this incredible one that was even better than I could have imagined! 

A vegan baked Camembert is life changing, trust me! I’ve eaten this so many times. I don’t care if you’re vegan, vegeratrain, felixitarian, omnivore or whatever you wanna call yourself; I dare you to try this recipe! Even if you don’t like cheese, let’s be honest it doesn’t taste like reael cheese. Still, I’d prefer this over a real baked Camembert.

The texture is cheesy, creamy, yummy and everything I craved for. From time to time I edited the recipe a little, so you can try the perfect version.

The whole thing has 320 kcal and is definitely enough for one person. I ate it a lot and was never still hungry after it. Still, if you want a bigger portion or even double it for two people make sure not to double the baking time or else the surface will get burned. Also I’d recommend using a seperate bowl for each person.

If you don’t want to eat it with bread you could also do a lower calorie version by using vegetables to dip in.

  1. Let cashews soak in water for a long time (I did 9 hours)
  1. Add all the ingredients to a blender (the water too!) and blend until it's a combined and very runny mixture
  1. Cook in a pot for about 5 minutes until it gets thicker
  1. Bake in the oven for 25 minutes at 180°C
  1. Enjoy with some bread or vegetables
