Chickpea salad with celery and apple
Today we have a very unconventional salad. The main ingredients are chickpeas, celery and apples. Together with some avocado and lemon juice it is an amazing combo. You don’t need to warm it up, it is really nutritious and doesn’t have a lot of calories. Another pro; It is fully vegan, so we’re eating animal-friendly today. Why I am calling this salad Ashley’s chickpea salad? I’ve seen this salad in so many of “Ur mom Ashley”s YouTube videos so I had to give it a try, even though I was skeptical at the beginning. For those who don’t know her, go check out her account and YouTube channel, she’s uploading a lot of vegan themed funny videos! Finally I’m allowed to work at my workplace for a few weeks instead of just doing home office. I’m so glad I’m not always stuck alone in my room. But not eating lunch at home always is a little challenge when you’re trying to eat healthy. However, I’m trying easy mealprep ideas, so I don’t have to buy unhealthy stuff at the cafeteria.
